Cherry Almond Cinnamon Homemade Granola


This is a recipe that I received from the Food Network show. It is from the Barefoot Contessa show and is an easy recipe to follow and make. It is a delicious way to make homemade granola that can be used for breakfast with milk or vanilla yogurt or as a dessert topping for ice cream. Be creative and use this in many ways. Hope you enjoy this

Cherry, Almond and Cinnamon
Homemade Granola
(Recipe from Barefoot Contessa)

4 Cups old-fashioned rolled oats
2 Cups sweetened, shredded coconut
2 Cups sliced plain unsalted almonds
1 ½ Cups dried cherries, chopped
½ Cup vegetable or canola oil
1/3 Cup good honey
2 tsp. ground cinnamon

Preheat oven to 350 degrees.
Toss the oats, coconut, almonds, and cherries together in a large bowl. Mix together vegetable oil and honey and pour over the oat mixture. Add cinnamon and stir with a wooden spoon until all the oat mixture is coated with the liquids. Pour onto a sheet pan with sides. Bake stirring occasionally with a wooden spoon until the mixture turns a nice, even golden brown, about 25-30 minutes.

Remove the granola from the oven and allow to cool; stirring occasionally. Store cooled granola in an airtight container. Makes about 10 cups of granola
